Character

An oil packed with character. Extremely fruity, very intense green notes (raw artichoke). The finish is characterized by a sophisticated, delicate astringency and a sometimes almost explosive peppe-riness.
Main olive varieties : Salonenque, Aglandau, Bouteillan, Cayon. Terroirs : Calcareous, free-draining soils.
Harvesting : November to December. Extraction : First cold-pressed, unfiltered
